Since working from home, I try to keep my meals as light as possible so I made this a low-carb Keto Shrimp Scampi without the usual pasta, but please feel free to serve it with your favourite pasta, or better still, you can serve it with zucchini noodles, spaghetti squash noodles, Shirataki noodles, mashed cauliflower, or cauliflower rice. That would make it a little more filling, but still keep it low-carb to maintain ketosis.

 

 
 
 
 

 
 

I like making this Shrimp Scampi on days when I occasionally feel like unwinding with a glass of wine over a delicious meal and jazz music (Lo-fi chill beats too). Since I will need a splash of white wine to make Shrimp Scampi, I would grab a 375 ml bottle of Sauvignon Blanc White Wine which is more than enough to cook, with some leftovers to fill my wine glass during the meal. It’s like ‘killing two birds with one stone’, in a sweet way. However, if you’re on a strict Keto Diet, please feel free to omit the wine altogether.

Let’s start making this Shrimp Scampi. It’s exceptionally easy and quick to make for one person, even after a long day, on any day or night, or whenever you fancy really—all in the Air Fryer!

INGREDIENTS YOU’LL NEED

  • *FROZEN SHRIMP, SHELLED & DEVEINED (300 G)

  • LEMON JUICE, FRESHLY SQUEEZED (1 TBSP)

  • *ITALIAN PARSLEY, FRESHLY CHOPPED (5 G)


FROM THE PANTRY

  • UNSALTED BUTTER (20 G | 1.5 TBSP)

  • GARLIC, PRE-MINCED STORE-BOUGHT (1 TBSP)

  • HIMALAYAN PINK SALT OR SEA SALT (TO TASTE)

  • BLACK PEPPER, FRESHLY GROUND (TO TASTE)

  • *SAUVIGNON BLANC (60 ML | 1/4 CUP)

  • HOT PEPPER FLAKES (OPTIONAL, TO TASTE)

Prepare an oven-safe dish that fits the size of your air fryer and add butter and minced garlic to the dish. Cook in the air fryer at 180 °C | 350 °F for 2—3 minutes.

Add premium quality frozen shrimp to the melted garlic butter in the air fryer.

Then season shrimp with salt & pepper and top with freshly chopped parsley and white wine. Also, add red pepper flakes if desired. Mix all together

Cook in air fryer at 180 °C or 350 °F for another 7—10 minutes. Squeeze lemon juice on top. Bon Appétit !


*NOTES

  • It’ll take lesser time to cook if shrimp are thawed. But it doesn’t have to be thawed. You can cook it while frozen, and it will produce more scampi sauce.

  • Any white wine will do too. It doesn’t have to be Sauvignon Blanc. And if you’re on a strict Keto Diet or non-alcoholic diet, omit the wine altogether and substitute with broth or filtered water.

  • You can substitute fresh Italian parsley with dried parsley from the pantry. If so, use 1/8 tsp of dried parsley.

  • This can be cooked on the stove top too if you don’t have an air fryer.

 
 
 
 
 
 

 
 

COOKING FOR ONE


This recipe is developed for the ‘Cooking For One’ Video Series and is designed with efficiency and ease in mind for the Solo diner. The goal is to encourage Solos who live alone to cook for themselves by making the process quick, effortless and hassle free. Frozen premium ingredients are used instead of the usual fresh ingredients that I championed so as to cater to the Solo lifestyle. Also, smart kitchen appliance such as the air fryer is utilised so that you can walk away to work on other tasks while the food is cooking, thus making the process more efficient. And it is a simple one-dish meal (usually requires less than 5 ingredients other than the ingredients from the pantry); is just single serving or in small servings so there is little to no leftovers; and very minimal cleanup at the end of the meal by intentionally using the same or very few kitchenware to cook and serve with throughout.

 

 

*SOME TIPS

In this recipe, frozen shrimps that are already shelled and de-veined are chosen over fresh shrimps with shell on, along with store-bought pre-minced garlic instead of whole garlic with skin on that would otherwise require peeling, cleaning and mincing for convenience. Also, the same dish is used to cook and serve the shrimp scampi in, along with very few other kitchen tools so that the total sink load at the end of the meal is just five counts.
